Creamy Onion potato and ham soup

How to make a creamy onion potato and ham soup, simple step by step instructions from start to finish.

  • 1ltr / 2.2 pints Ham or Chicken stock
  • 2 Large onions  (approx: 550g / 1lb.3oz)
  • 2 Large Potatoes (approx: 550g / 1lb.3oz)
  • 170g / 6oz Boiled ham (pulled)
  • 150mls Double or heavy cream
  • 15g / ½oz Chives (chopped)
  • 2g ½tsp Black pepper.
  • Salt to taste
  • Bring the stock to a boil.
  • Add the chopped onions, grated potatoes, and black pepper to the stock, and bring to a boil, simmer for 10 minutes.
  • After the 10 minutes, blend it all together with a hand blender, until smooth.
  • Add the ham, chopped chives, and cream, mix together.
  • Simmer for a further 5 minutes, and that is it, done.
  • Serve piping hot, straight from the pan, with crusty bread.
