Air Fryer Banana Bread

How to make delicious banana bread in your air fryer, it’s quicker, cheaper and easier, simple step by step instructions from start to finish.

Method

  • Wet ingredients:
  • 2 Bananas (large & ripe)
  • 2 Large eggs
  • 70g / 2½oz Butter (unsalted)
  • 6mls / 1tsp Vanilla extract
  • Dry ingredients:
  • 170g / 6oz Self raising flour
  • 85g / 3oz Granulated sugar
  • 2g / ¼tsp Salt
  • 2g / ½tsp Ground Cinnamon
  • 2g / ½tsp Nutmeg (freshly grated)
  • 60g / 2oz Chopped Walnuts
  • Note: If you plan to use plain or all-purpose flour, you will need to add 2tsp of baking powder to the recipe.
  • Grease a 900g / 2lb loaf tin and line the bottom with parchment paper, make sure it fits inside your air fryer drawer.
  • In a small dish, plate or bowl and using a fork, mash up your ripe bananas.
  • In a large bowl, cream together the sugar and the butter, until light and creamy.
  • Add the mashed bananas, eggs, and vanilla extract to the large bowl and whisk for at least 2 minutes.
  • Mix all of the dry ingredients together, that’s the spices, baking powder and salt in with the flour.
  • Sift the dry ingredients on to the wet batter, through a fine mesh sieve.
  • Gently fold the wet and dry together, do not over mix, or you will knock the air out that we just whisked in.
  • Add the chopped walnuts, and gently fold them into the batter.
  • At this point It’s a good idea to preheat your air fryer, I set mine to Bake mode at 160°C / 320°F, for 3 minutes.
  • Transfer the batter to the prepared loaf tin, give the tin a few taps on the bench to lift any of the larger air bubbles.
  • To give the finished cake a little crunch on top, sprinkle some course demerara sugar over the top of the batter.
  • Place the tin in the preheated air fryer, set to Bake mode at 160°C / 320°F, bake for 35 minutes.
  • Check with a cocktail stick to see if it’s done, it the stick comes out clean, it’s done, if not, give it an extra 5 minutes.
  • Place the tin on a wire rack, and allow to cool for 15 minutes.
  • Remove the cake from the tin, it is now ready to slice and serve.
  • Enjoy.
