Cheese n Chive Rolls

How to make delicious no knead cheese and chive rolls, easy step by step instruction from start to finish.

  • 325g /11½oz Strong white bread flour
  • 240g / 240mls/ 8½oz Warm filtered or bottled water
  • 1tsp/4g Instant or active dried yeast, or 15g fresh yeast
  • 4g / ½tsp Salt
  • 15g/1tbls Vegetable or olive oil
  • 70g Cheese of your choice
  • 10g Chopped chives
  • Add the yeast and oil to the lukewarm water (40°C /104°F) and mix thoroughly.
  • To a warm bowl add the flour, salt, chives and cheese, mix until everything is evenly distributed.
  • Give the yeast mixture another stir before adding it to the bowl, mix all the ingredients to sticky shaggy dough, clean down the sides of the bowl, cover and allow to rise for 45 minutes.
  • After the 30 minutes turn the dough out onto a slightly wet surface and fold the dough over itself for approx 30 seconds, get it back into the bowl cover and allow rising for 30 minutes.
  • Grease a suitable baking tray with lard, butter,shortening ,or oil.
  • After the second rise turn the dough out onto a floured surface and sprinkle a little flour on the dough, knock it back and shape it into a rectangle.
  • Divide the rectangle into 4,6,or 8 pieces, for each piece into dough balls (use extra flour if too sticky to handle) and place them onto the pre greased tray.
  • Cover the tray with a dry lightweight cloth, and allow to rise for 30 minutes.
  • When there is only 15 minutes left on the rise, preheat your oven to 200°C / 390°F / Gas mark 6, at the same time carefully place a tray of hot water on the bottom shelf of the oven.
  • When the time is up finely grate a little cheese on the top of each roll, and place the tray in the preheated oven for 20 minutes.
  • When the time is up, allow the rolls to cool on a wire rack.
