Mix together the potato, cheese, onion and seasoning, until everything is completely combined, once mixed divide it into 4 equal pieces. Beat the egg until loose and runny (add a dash of milk in necessary) Preheat your oven to 160°C / 320°F / Gas mark 4. Open the sheet of puff pastry and divide into 4 strips. Place one of the cheese mixture onto the pasty, brush egg wash all around the edges and fold over, do this with all 4 pasties. Seal the edge of each pasty with tangs of a fork, dip the fork in the egg wash to stop it sticking. Brush each pasty liberally with the egg wash, cut 2 or 3 small vent holes in each pasty. Place them in the preheated oven and set your timer for 30 minutes. Remove the golden-brown pasties from the oven, place them on a wire rack, allow them to cool and settle for 10 minutes before serving.
