Cheese & Potato Croquettes
How to make my mouthwatering Cheese & Potato Croquettes in a crispy breadcrumb coating. Step by step guide from start to finish.

- 500g / 18oz Potatoes (400g / 14oz when peeled)
- 100g / 3½oz Cheddar Cheese (Mature/Strong)
- 85g / 3oz Plain / All-purpose Flour
- 1 Shallot or 1 small Onion (diced very small)
- Small bunch of Chives (cut small)
- 2 Garlic cloves (chopped fine)
- Salt n Pepper to taste
- Flour/ Beaten egg/ Breadcrumbs
- Oil for frying
- Wash and peel the potatoes, cut them into 3cm / 1½in pieces.
- Add enough water to just cover them in a medium size pan, add 4g / ½tsp of salt, bring them to a steady low boil, get the lid on the pan and set your timer for 20 minutes.
- Once the time is up on the potatoes, thoroughly drain them, season with salt and white pepper, mash them until nice and fluffy.
- Add the cheese, onion, chives and garlic, give those a good mix in.
- Add the flour to the pan and give it a quick mix.
- Turn the mixture out onto a lightly floured bench, (make sure it is cool enough to handle) and with gloved hands give it a quick knead.
- Divide the mixture into 12 pieces, form them into the croquette shapes (see the video) and get them onto a lightly oiled plate.
- Get them into the freezer, for at least 6 hours, check after 1 hour, to make sure they are not sticking to the plate.
- Cooking them:
- Ready three containers with, seasoned flour, beaten egg, and breadcrumbs.
- Get a frying pan with 1cm of cooking oil on a low heat and bring the temperature up to 160°C / 320°F
- Cook them from frozen, coat the croquettes 1st in the flour, then egg, then breadcrumbs, repeat this again so they have a double coating.
- Carefully get them into the pan, do this in 3 or 4 batches, do not overcrowd the pan.
- Cook these very slowly, it should take 12 to 15 minutes to fry each batch.
- If the heat is too high the internal temperature will cause the filling to Ooze out, so for best results, cook low and slow.
- Once done, serve piping hot straight from the pan.
