Chocolate Muffins

Delicious Chocolate muffins, easy step by step instructions from start to finish.

Ingredients

Method

  • 110g / 4oz Unsalted butter (room temperature)
  • 150g / 5oz Castor sugar
  • 3 medium size eggs approx 150g / 5oz without the shell (beaten, room temperature)
  • 110g / mls / 4oz full fat milk
  • 180g / 6.3oz Self Raising flour, if using plain or all purpose flour add an extra 2 tsp baking powder
  • 35g / 1.2oz Cocoa powder
  • 4g /1tsp Baking powder
  • 100g / 3½oz plain chocolate chips + plus extra for topping
  • Before starting the recipe preheat your oven to 180°C / 356°F or gas mark 4.
  • Prepare a muffin tin as shown in the video.
  • Cream the butter and the sugar together until soft, smooth and light, the colour should be a creamy white.
  • Add the beaten eggs in 3 to 4 stages as shown in the video.
  • Sift the flour cocoa and baking powders into a separate bowl to get rid of any lumps.
  • Add half the dry ingredients and milk to the mixture and gently fold it in, once creamy add the other half on the dry mixture and milk and fold that in until you have a smooth creamy batter.
  • Add the chocolate chips and gently fold those in too.
  • Divide the batter between the 12 muffin cases.
  • Sprinkle a few chocolate chips to the top of each muffin case, not too many, approx 8 or 9 to each muffin.
  • Place the tin into the preheated oven and bake for 25 minutes.
  • When the time is up check with a cocktail stick, if it comes out clean they are done, if not bake for a further 2 to 3 minutes.
  • Remove from the oven and allow to cool for at least 30 minutes on a wire rack.
  • Enjoy.
