Condensed Milk Lemon Drizzle Cake
How to make this awesome Lemon drizzle cake using a can of condensed milk, quick, easy and delicious. Step by step guide from start to finish.

- 200g / 7oz Plain/ all-purpose flour
- 15g / 1tbls Baking powder
- ¼tsp Salt (Omit: if using salted butter)
- Zest & Juice of 1 Large Lemon
- 380g / 14oz Can Condensed milk
- 155g / 5½oz Butter (melted)
- 3 Eggs (large, room temp)
- 6mls / 1tsp Vanilla extract
- Icing/Frosting:
- 140g / 5oz Icing or Powdered Sugar
- Lemon Juice
- Preheat your oven to 160°C / 320°F / Gas mark 3.
- Grease and flour or line with parchment paper a 2lb / 900g loaf tin.
- Zest and Juice 1 large lemon.
- Melt the butter: just until it becomes runny (I use the microwave).
- Add the eggs to a bowl and whisk until light and airy, a hand-held electric mixer is ideal (see video).
- Add the condensed milk and whisk for 1 minute.
- Now add the lemon zest, butter and vanilla extract, whisk for a further minute.
- Sift in the flour, baking powder and salt, (omit the salt if using salted butter)
- Using a spatula, gently fold in the flour until you have a smooth batter, (don’t worry if there a few small lumps of flour in the batter they will cook out).
- Carefully pour the batter into your prepared loaf tin/pan, making sure you scrape it all out of the bowl.
- Give the tin a few light taps on the bench to lift any of the larger air bubbles.
- Now get it into your pre-heated oven and bake for 50 minutes.
- When the time is up, check it with a cocktail or kebab stick, if it comes out dry, it’s done, if not bake for a further 5 minutes and try again.
- Place the cake (still in the tin) on a wire rack and with a cocktail stick prick a few holes in the cake.
- Spoon half of your lemon juice over the cake and let it soak in for 10 minutes.
- Making the lemon Icing or drizzle:
- In the meantime, mix the remaining lemon juice with the icing sugar, making a thick smooth lemon icing or frosting.
- Remove the cake from the tin and place it on a wire rack over a clean dry baking sheet.
- Pour the thick icing over the top of the cake allowing to drizzle over the sides.
- Using a couple of bench scrapers, scoop up any icing that flowed into the baking sheet and pour it back over the top of the cake, it will eventually thicken and set.
- Once the icing has set, slice and serve with a nice cup of tea or coffee.
