Egg Fried Rice with King Prawns

How to make this simple and impressive looking basic egg fried rice recipe; with king prawns.

  • Serves 2
  • 400g / 14oz Day old cooked Basmati rice
  • 170 / 6oz King Prawns
  • 1 Large egg
  • 40g / 1½oz Frozen sweet peas
  • 2 Spring/green onions finely chopped
  • 4 baby carrots finely chopped
  • 1 clove of garlic finely chopped
  • 1 tsp Dark soy sauce
  • 1 tsp Chicken or MSG granules
  • ½ tsp Salt
  • The rice ingredients for 2 servings
  • 150g / 5½oz Basmati rice
  • 1tsp Olive oil
  • ½tsp Salt
  • Cook the rice the day before making the dish and keep refrigerated overnight as shown in the video: as freshly cooked rice on the day would be too sloppy for fried rice.
  • Finely dice the onions, carrots and garlic and place aside.
  • Beat the egg.
  • If using prawns (I use king prawns in the video) pre part cook them as shown.
  • Have everything handy and ready to go.
  • Heat up your wok or frying pan (hot).
  • Add 1 tbls of vegetable oil and quickly cook the egg to a scrambled consistency, once cooked remove from the pan and set it aside.
  • Add another tbls of vegetable oil (hot) fry off the onions, garlic, and carrots for one minute.
  • Add the rice and break up any clumps so it is all loose and single grained.
  • Add the seasoning, chicken powder or MSG, salt, and finally the soy sauce, mix and toss well for 2 minutes.
  • Add the egg back into the pan mix again for one minute before adding the frozen peas.
  • Finally add the prawns mix for a further minut until everything is piping hot and serve.
