Creamy Onion potato and ham soup

- 1ltr / 2.2 pints Ham or Chicken stock
- 2 Large onions (approx: 550g / 1lb.3oz)
- 2 Large Potatoes (approx: 550g / 1lb.3oz)
- 170g / 6oz Boiled ham (pulled)
- 150mls Double or heavy cream
- 15g / ½oz Chives (chopped)
- 2g ½tsp Black pepper.
- Salt to taste
- Bring the stock to a boil.
- Add the chopped onions, grated potatoes, and black pepper to the stock, and bring to a boil, simmer for 10 minutes.
- After the 10 minutes, blend it all together with a hand blender, until smooth.
- Add the ham, chopped chives, and cream, mix together.
- Simmer for a further 5 minutes, and that is it, done.
- Serve piping hot, straight from the pan, with crusty bread.
