Pizza 12" (Easy Stuffed Crust)

How to make a 12” /30cm stuffed crust Pizza, simple step by step instructions from start to finish.

Ingredients

Method

  • Pizza Dough:
  • 620g / 22oz Strong white bread flour
  • 400g / 400mls Lukewarm water / 40°C / 104°F
  • 15g / 1tbls Vegetable oil
  • 7g / 2tsp Instant or active dried yeast
  • 8g / 1tsp Salt
  • 6g / 1tsp Sugar
  • Tomato Sauce:
  • 1 Large can Chopped tomatoes
  • 45g / 2 tbls Olive oil
  • ½ Medium onion, finely chopped
  • 1 Large clove of garlic
  • ½tsp Dried Oregano
  • ½tsp Dried Basil
  • ½tsp Salt
  • Add the sugar to the warm water and stir, once dissolved, add the yeast and stir it in thoroughly, set it aside until it activates.
  • Add the salt to the flour and mix together.
  • Once activated, add the water to the stand mixer bowl, followed by the oil, add the flour and salt to the bowl, start the machine on first speed, and using the dough hook knead for 10 minutes.
  • If you are kneading this recipe by hand, add all of the ingredients to a bowl and partially mix it all together, tip it out onto your worktop and knead the dough for 10 minutes, then carry on with recipe.
  • Turn out the dough from the mixer, and form it into a ball, place it into a lightly oiled bowl, cover the bowl, and let it rise for a minimum of 1 hour in a warm draft-free spot, the dough should at least double in size (this may take longer depending on the temperature of your kitchen)
  • After the first proof, divide the dough into 3 equal pieces, and form them into balls.
  • Each of the pieces is enough to make a 12in / 30cm pizza, you can freeze 2 of these to use in the future.
  • Place one of the doughballs in a lightly oiled plastic container and allow to proof for 45 minutes.
  • Making the tomato sauce.
  • In a saucepan, fry the onions in the olive oil, until soft.
  • Add the chopped garlic, and the dried herbs, and mix.
  • Add the large can of chopped tomatoes, and the salt, stir well and simmer, for 5 minutes, set aside, and allow to cool.
  • Once proofed, form the dough into a circle, place the dough on a 12in pizza pan, (see the video on how to stuff your crust).
  • Pre heat your oven to 230°C / 445°F / Gas mark 8.
  • Add ⅓ of the sauce to base of your pizza dough.
  • Add the topping of your choice (see video for my choice of topping).
  • Bake in the pre-heated oven for 12 minutes.  
  • Remove from the oven, brush the crust with garlic and chilli oil, slice and serve piping hot.
  • Enjoy.
