Rock Cakes
How to make 8 incredibly delicious, old school Rock cakes at home, easy step by step instructions, from start to finish.

- 255g / 9oz Self-raising flour
- 85g / 3oz Caster sugar
- 140g / 5oz Cold butter (diced)
- 6g / 1tsp Baking powder
- 140g / 5oz Dried fruit
- 1 Large Egg (beaten)
- 1tbls / 18mls Milk
- 1tsp / 6mls Vanilla Extract
- ¼tsp salt, (only if you used unsalted butter)
- 4tsp icing sugar +1tsp water (optional)
- 55g / 2oz Melted Chocolate (optional)
- Note: If you are using plain or all-purpose flour, you will need to add an extra 2tsp of baking powder to the recipe, making a total of 3tsp.
- Sift the flour, sugar, and baking powder into a large bowl, and rub in the diced butter, until you have a fine breadcrumb consistency.
- Mix the dried fruit into the flour mixture.
- Pre heat your oven to 180°C / 355°F / Gas mark 4.
- Line a large baking tray with parchment.
- Whisk the egg, milk, and vanilla extract together and add it to the dry ingredients.
- Using a wooden spoon roughly mix it together until it becomes partly combined.
- Tip it out onto your worktop, and using your hands bring it all together into quite a dry lumpy mass.
- Dived the dough into 8 pieces, tear the pieces off, so they look quite rugged, place them on the baking tray, leaving plenty of room in between them, as they will double in size.
- Get them into the preheated oven, and bake for 18 to 20 minutes.
- Once done, use a fish slice to move them onto a wire rack to completely cool.
