Traditional Roast Potatoes:
How to make traditional roast potatoes in your oven, perfect for any roast meat dinner, but especially good with your Christmas dinner.

- 1kg / 2¼lb Potatoes (Suitable for Roasting)
- 100g / 3½oz Beef Dripping, or Duck / Goose fat
- 4g / ½tsp Salt, (in the boiling water)
- Salt and Black pepper
- In the UK, I like to use, either Maris Piper or King Edward potatoes for roasties, find a good roasting potato to use where you live.
- Wash and peel the potatoes.
- Cut the potatoes into 3cm / 1¼in pieces and rinse them in cold water.
- In a suitable size pan, cover the potatoes with water, add 4g / ½tsp of salt and bring it to a boil.
- Once boiling, get the lid on the pan, turn down the heat, simmer for 7 minutes.
- In the meantime, add 100g / 3½oz of beef dripping, duck or goose fat to a deep baking tin/pan, and get it into the oven set to 200°C / 390°F / GAS Mark 6.
- Once the time is up, drain the potatoes in a colander.
- When completely drained, give the colander a gentle shake to rough up the edges of the potatoes.
- When your fat is up to temperature, it should be slightly smoking, very carefully lift the tin out of the oven and onto your cooker/stove top.
- Slowly and gently tip the potatoes into the hot fat, avoiding any slashing.
- Using a couple of forks, gently turn and separate each potato in the fat, making sure every one of them is coated.
- Once coated, sprinkle on a little sea salt and freshly ground black pepper.
- Get the tin back into the oven and set your timer for 45 minutes.
- Once the time is up, check they are the colour and crispness that suits you.
- Very carefully remove them, one at a time, onto a kitchen paper lined plate, to drain off any excess fat, then into a serving bowl and straight to the table while they are piping hot.
- If you want to prep your potatoes to use the next day, do everything above, up to the point when you drain and roughed up the edges, let them completely cool at this stage, then refrigerate until you need to use them the next day.
